Rum Cake
- 1 c pecans, chopped
- 1 box gluten free yellow cake mix
- 1 3.4 oz box vanilla pudding mix
- 1 c applesauce
- 0.5 c cold water
- 0.5 c Vegetable oil
- 0.5 c rum, 80 proof
- 0.5 c Vegan butter, 1 stick
- 0.25 c water
- 1 c Granulated sugar
- 0.5 c rum, 80 proof

- 0.25 c shortening

Preparation of the Cake
1. Preheat oven to 325 degrees.
2. Use your hands to grease Bundt pan with shortening.
3. Sprinkle pecans over bottom of pan.
4. In a stand mixer using the paddle attachment mix together gluten free cake mix, pudding mix, applesauce, water, oil and 1/2 cup rum. Once combined turn mixer to medium high. Mix for 3 minutes until fluffy.
5. Pour batter over pecans.
6. Bake for 1 hour or until toothpick comes out of cake clean.
7. Let cake cool completely in pan.
8. With a fork poke holes in top.
Preparation of the Glaze
1. Melt butter in saucepan.
2. Stir in water and sugar.
3. Boil 5 minutes, stirring constantly.
4. Remove from heat.
5. Stir in rum.
Final Steps
1. Pour glaze evenly over top and sides of cake.
2. Allow cake to absorb glaze.
3. Repeat until glaze is used up.
4. Invert cake in a serving plate.
