Main Ingredients
- 3 cups Sela Basmati Rice
- 2 cross cut shanks
- 1 c Cooking oil
- 0.5 c black raisins
- 2 c julienne carrots
- 2 tbsp Sugar
- 2 white onions
- 2 tbsp chopped garlic
- 1 tbsp coriander powder
- 3 tbsp Salt, or to taste
- 6 c water
For Spice Mix Powder
- 1 tbsp Cumin seeds
- 1 tbsp whole black pepper
- 4 cinnamon stick
- 4 black cardamom
- 10 green cardamom
- 8 Cloves

Preparation of Raisins and Carrots
1. Add 1/2 cup oil to your cooking pot and once it’s hot add raisins.
2. Sauté it for a couple of minutes.
3. Once it becomes plump, remove it.
4. Now in the same pot, add julienne carrots and sugar.
5. Once the sugar caramelizes and carrots are translucent, remove it from the pan.
6. Set it aside.
Preparation of Meat and Rice
1. Wipe the pan with a paper towel to remove sugary oil.
2. Add the rest of the oil to the same pan.
3. Now it’s time for the onions to be slightly cooked before adding in the garlic.
4. Cook for a couple of minutes before carefully placing in the shanks.
5. Once the meat changes color, add in the coriander powder and 2 tbsp of freshly grounded spices.
6. Add the water and let it cook for 2-3 hours on a medium heat.
7. You can also cook it in a pressure cooker for faster results.
8. Once the meat is tender and there is 6 cups of broth, add the soaked rice.
9. Make sure the rice gets at least an hour of soaking.
10. If you don’t have enough broth, add more water.
11. Add the rest of the ground spice mix to the rice/broth.
12. Once most of the water gets absorbed by the rice, cover it and let it cook on low heat for 20-30 minutes.
Serving the Dish
1. Time to dish out.
2. Add carrots and raisins on top of the plated pulau.
