- 0.5 c fresh mint leaves
- 1 c fresh pineapple chunks
- 1 Lime juice
- sparkling mineral or tonic water
- ice cubes
- lime wedges
- honey
- Tajin seasoning

To make the simple syrup
1. Combine the water and sugar in a small saucepan.
2. Bring to a boil, stirring occasionally, and simmer until the sugar has dissolved.
3. Let the syrup cool to room temperature.
Blend mint and pineapple
1. Add the cooled syrup, fresh mint, and pineapple chunks into a small blender or food processor.
2. Pulse until smooth.
3. Stir in lime juice to taste.
Garnish the glasses
1. Spread a little honey along the glass edges.
2. Dip the glass edges into tajin seasoning.
Prepare the drink
1. Add ice to the glasses.
2. Add 3-4 tablespoons of the simple syrup.
3. Fill with sparkling mineral water to desire.
4. Stir the mixture together so the simple syrup is evenly distributed in the glass.
