Sourdough Bread
- 2 slices Sourdough bread
- 2 red onions
- 0.25 c Feta cheese, plant-based from Violife to make it vegan
- 0.25 c Fresh dill
- 2 tbsp walnuts
- 2 tbsp Extra virgin olive oil
- 0.5 tsp Salt
- 0.25 tsp cracked pepper

Preparing the onions
1. Peel and thinly slice the onions. If you have a mandoline, I recommend using it.
2. Heat olive oil in a pan over medium-high heat.
3. Add onions to the pan and immediately add salt so that they begin to release their liquids.
4. Cook at a medium-low temperature for around 30 minutes or longer.
5. Stir every few minutes until they become very dark (not burnt!) and start to get sticky.
6. Once done, remove it from the pan.
Preparing the toast
1. In the same pan, heat more olive oil and toast your sourdough directly in the pan.
2. Spread the toast with the caramelized onions, top with crumbled (vegan) Feta cheese, dill, walnuts, cracked pepper, and drizzle with olive oil.
3. Enjoy!
