Ingredients

Kari
- 3 c butter milk
- 1 c gram flour
- 0.5 c Oil
- 0.5 c Onion, chopped
- 2 Tomatoes, purée
- 0.5 tsp fenugreek seeds
- 1 tbsp fenugreek leaves
- 1 tsp Cumin seeds
- 1 tsp red chilli powder
- 1 tsp Turmeric powder
- 1 Bay leaves, broken
- 1 tbsp garlic paste
- 1 tbsp Salt, or to taste
Pakora
- 1 Potato, sliced
- 1 Onion, sliced
- 2 c Spinach, fresh
- 2 c fenugreek leaves
- 2 c gram flour
- 1 tsp Salt, or to taste
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
- Salt, to taste
- 1 c Buttermilk
- Oil, for frying

- 1 tsp Cumin seeds
- 1 tsp Chili flakes, crushed

Directions

For the buttermilk mixture
1. Take the gram flour and add it to half a cup of buttermilk.
2. Once it’s a smooth paste, add it to the rest of the buttermilk and stir until well combined.
For the gravy
1. In a pot add oil.
2. Once hot, add onions.
3. Once it is lightly golden, add garlic, cumin seeds, bay leaves and fenugreek seeds.
4. After 2 minutes of stirring, add salt, red chili, cumin and coriander powder.
5. After 30 seconds add in the tomatoes along with fenugreek leaves (crush it with both of your palms before adding).
6. Now add the buttermilk to the gravy and mix well.
7. Let it cook for 10 minutes while constantly stirring.
8. Now add 2 cups of water and let it simmer for 30 minutes.
For the pakora
1. In a mixing bowl add all the pakora ingredients listed above (excluding buttermilk).
2. Mix it with your hand so all ingredients are well incorporated.
3. Then slowly add the buttermilk.
4. Add until the batter becomes creamy consistency.
For the final steps
1. Once all pakora are fried, gently add it to the Kari.
2. Lastly, take a small frying pan.
3. Add oil, cumin seeds, and dried chili flakes.
4. Let it cook for 30 seconds before adding it to the Kari.
5. Now serve it with boiled rice.
6. Enjoy!
