- 6 corn tacos
- 8 oz Oyster mushrooms
- 5 oz shiitake mushrooms
- 1 tsp achiote paste
- 2 clove Garlic, finely diced
- 1 tbsp Olive oil

- pico de gallo
- guacamole
- Hot sauce

Preparing the Mushrooms
1. Clean the mushrooms and dice or tear them into strips.
2. Then, heat a pan over medium-high heat and add finely diced garlic to the olive oil.
3. Add achiote paste to the pan and let it dissolve.
4. Take the pan off the heat and combine the mushrooms with the achiote-garlic-oil mixture.
5. Marinate the mushrooms well. This can be done ahead of time.
Cooking the Mushrooms and Assembling the Tacos
1. In the same pan, cook the mushrooms until they are nicely seared and thoroughly done.
2. Prepare your corn tacos according to the instructions and fill them with the cooked mushrooms.
3. You can serve the tacos with pico de gallo, guacamole, and hot sauce.
