Ingredients

- 2 c Chocolate Overnight Oats
- 2.5 c Milk
- 1 c Greek yogurt
- 0.5 cup Chia seeds
- 3 tbsp Maple syrup
- 1 tsp Vanilla extract
- 0.5 c all-purpose flour
- 1 tsp Baking powder
- Unsalted butter, for cooking

Directions

Instructions
1. Whisk together oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla, and flour until it comes together. Store in the fridge overnight.
2. When you’re ready to cook them, sprinkle them with baking powder and fold to combine.
3. Heat butter in a non-stick pan over medium heat. Add ⅓ cup of the overnight oats mixture to the pan and cook until bubbles appear on the surface and the edges begin to set, about 3 minutes. Flip the pancakes and cook until the other side is golden-brown, 3 to 4 minutes more.
4. Transfer the pancakes to a warm oven or plate. Repeat with the remaining batter. Enjoy immediately with maple syrup and fresh fruit, if desired.
