- 0.5 lb French Comté cheese
- 4 golden potatoes
- 4 clove Garlic
- 1 stick Unsalted butter, chilled
- 0.5 c Heavy cream, heated

Directions

Preparation of Ingredients
1. Open the Comté cheese and remove the rind using a knife.
2. Then, grate the cheese and set aside for later.
3. Peel the potatoes and cut into 1/4’s.
4. Peel the garlic.
Cooking Process
1. Simmer the potatoes in salted water.
2. Add in the garlic, and cook until tender.
3. Drain the water, remove the garlic.
4. Immediately, push the hot potatoes through a ricer or a strainer using a wooden spoon.
5. Do this step quickly before the potatoes cool down and harden.
6. Immediately after, place the now mashed potatoes back into the pot and cook over low heat while mixing with a wooden spoon.
7. Next, add the cold butter, 1/4th at a time and mix until fully melted and incorporated.
8. Follow the same process with the hot cream and stir until incorporated.
9. Lastly, add the grated Comté cheese little by little while vigorously stirring.
10. You will notice the cheese will begin to string.
11. Once all the cheese is incorporated, serve and enjoy!
