- 1 lb Strawberries
- 1 Lemon, zested and juiced
- 0.333 c Granulated sugar
- pinch Salt
- 2 tbsp water
- 8 oz Mascarpone
- 1.5 c Heavy cream
- 1 tsp vanilla
- 6 shortbread cookies

Preparing the strawberries
1. Trim tops of strawberries and slice in half (bigger berries into quarters).
2. Combine in a pot with lemon zest, lemon juice, sugar, salt and water.
3. Cook over medium until softened about 5-8 minutes.
4. Transfer to a bowl and cool.
Creating the strawberry puree
1. Blitz 3/4 of the Berry mixture in food processor until smooth.
2. Pour through a fine mesh strainer and set aside.
Preparing the mascarpone cream
1. Beat the mascarpone for a minute or so.
2. Add heavy cream and vanilla and beat until soft peaks form.
3. Gently fold the puréed strawberry mixture.
Assembling the dessert
1. Pipe into short glasses and top with reserved chunky strawberry mixture and crushed shortbread.
2. Chill for 30 minutes and serve.
3. Enjoy!
