Ingredients

- 2 tbsp Avocado oil
- 2 tbsp sofrito
- 1 bouillon cube
- 2 tsp Healthy Rican Sazón
- 2 tbsp Tomato paste
- 2 tbsp diced onions
- 0.25 c diced squash
- 2 cans pinto beans
- 2 c water, use your own discretion depending on thickness desired
- 1 green plantain
- Salt, to taste

Directions

For the sofrito
1. Add the oil to a medium pot.
2. On high heat, stir fry the sofrito.
3. Add the bouillon cube, sazón, tomato paste and a bit of the water.
4. Stir until well mixed and allow to simmer.
For the main dish
1. Add the onions, squash, beans and remaining water.
2. You can cover and cook on low until the squash is done, and sauce has thickened.
For the optional plantain balls
1. If available and/or desired, you can add a green plantain for extra flavor.
2. Peel and chop the plantain.
3. Add to a blender with a bit of oil and salt.
4. The consistency should be sticky and not too runny.
5. Make little balls and add to your beans right after the liquid comes to a boil.
6. Cook covered on low until the plantain balls and squash are completely cooked.
For serving
1. Enjoy with a side of white rice! 😋
