For the rub
- 3 Tbs Fresh rosemary, finely chopped
- 2 Tbs Fresh oregano, washed, disinfected and finely chopped
- 2 Tbs Red onion, grated
- 2 clove Garlic, finely chopped
- 1 tsp Orange zest
- 0.5 tsp Rock salt
- 1 tsp Fresh black pepper
- 4 Tbs Olive oil
For the steak
- 2 New York strip steak(s), (240g each, approximately)
- 1 Tbs Unsalted butter
- 1 cup Chambray potatoes, blanched and halved
- 2 cup Baby spinach, washed and disinfected
- pinch salt and pepper
- Limes, quartered to taste

For the rub
1. In a bowl, mix all the ingredients until fully incorporated; split the rub in 2 and keep to the side.
For the steak
1. With a fork, pinch the steaks and place on a large plate. Cover the steaks with half of the rub; spreading it well all around, so the steak is nicely coated.
2. Heat a grill on medium heat and cook the steaks for 4 to 5 minutes on each side for medium rare and to get a crusty exterior.
3. Melt the butter in a pan and sauté the potatoes until they start to get golden brown. Stir in the spinach, salt and pepper; cook while stirring constantly until the leaves soften.
4. Slice the steaks, plate them and baste them with the rest of the rub; plate th spinach and potatoes to the side and enjoy with lime juice.
