- 1 lb Pasta
- 2 Meyer lemons
- 1 c Heavy cream
- Black pepper
- sea salt
- 0.5 c salted butter
- 1 c Parmesan, grated

Preparing the Pasta
1. Boil salted water and cook pasta according to the package instructions until al dente (slightly firm).
2. Before draining the pasta, set aside a cup of pasta water.
Preparing the Lemons
1. Wash lemons and grate the lemon zest.
2. Squeeze out juice out of one of the lemons and save the remaining one for later.
Preparing the Sauce
1. In a separate pot over medium heat, combine cream, lemon zest, and lemon juice and simmer.
2. Season with salt and black pepper.
3. Proceed to reduce heat and slowly add butter while whisking it in.
4. Once emulsified remove from heat.
Combining Pasta and Sauce
1. Place the cooked pasta into the pot with the sauce and turn on the heat to medium-low.
2. Pour 1/2 cup of pasta water on top as well as 1/2 cup of parmesan.
3. Toss using tongs and add the remaining parmesan and toss again until fully melted and creamy.
4. If the sauce looks too thick, add more pasta water a few tablespoons at a time and continue to toss until fully combined.
Serving the Dish
1. Serve immediately and, if you want, sprinkle a little extra parmesan on top and garnish with a little lemon peel.
