- 45 g Glutinous Rice Flour
- 10 g Corn starch
- 30 g Sugar
- 1 Teaspoon Cocoa powder
- 85 g Milk
- 10 g Butter
- 50 g Chocolate
- 25 g Heavy cream

Preparing the Dough
1. In a bowl, add glutinous rice flour, corn starch, sugar, cocoa powder and milk; mix until combined.
2. Filter and transfer into a pan.
3. On medium heat, mix and cook until soft dough is formed.
4. Add butter and knead until stretchy. (Use gloves to ease the process)
5. Dust corn flour and roll the dough.
Preparing the Filling
1. In a bowl, add chopped chocolate and hot heavy cream; let it sit for a minute and mix until combined.
Assembling the Mochi
1. Add the chocolate mixture in the middle of the mochi; cover and cut off the excess; dust corn starch to prevent sticking.
2. Refrigerate to your liking. If you like softer truffle filling, refrigerate for lesser time. And if you like hard truffle filling, refrigerate for a bit more time.
Final Steps
1. Coat with cocoa powder (optional).
2. Enjoy!
