Ingredients

Simple Mushroom Pasta
- 1 Tbsp Kosher salt, + more as needed
- 8 oz Spaghetti
- 1 Tbsp Olive oil
- 1 Tbsp Unsalted butter
- 6 oz Mushrooms, preferably white button, sliced
- 0.5 Shallot, finely chopped
- 1 clove Garlic, peeled + minced or crushed
- 0.333 Cup Dry white wine
- 1 Tbsp Parsley, chopped + more to garnish
- 0.75 Cup Heavy cream
- 0.5 Cup Parmesan cheese, grated
- freshly ground black pepper, to taste
- 1 tsp Lemon zest, optional
- 0.25 tsp Red pepper flakes, optional

Directions

Simple Mushroom Pasta Method
1. Bring a large pot of water to a boil and season with salt.
2. Add the dried pasta and cook until the pasta is about 1 minute shy of al dente.
3. Meanwhile, add the oil and butter to a large high-wall skillet and heat over medium heat.
4. Season the melted butter/oil with a sprinkling of salt, then add the mushrooms to the skillet.
5. Cook until the mushrooms have lost all of their moisture and have started to brown, about 5-7 minutes.
6. Add the shallot and cook for 2-3 minutes or until the shallots begin to turn translucent.
7. Add the garlic and cook for an additional 30 seconds or until fragrant.
8. Deglaze the pan with the wine and cook until the liquid has reduced by about half of its original volume, about 2-3 minutes.
9. Add the red pepper flakes (if using) and parsley and cook for 30 seconds.
10. Turn the heat to medium-low, then stir in the heavy cream and lemon zest (if using).
11. Continue cooking until the sauce is gently simmering and has thickened, 1-2 minutes.
12. Add in the nearly al dente spaghetti and toss to combine.
13. Add the pasta cooking water, ¼ cup at a time, as necessary until the sauce is glossy and coats the pasta well.
14. Turn off the heat and stir in the parmesan cheese.
15. Add more pasta cooking water if the sauce gets too thick.
16. Season the pasta to taste with salt and pepper.
17. Serve on a large platter and garnish with more chopped parsley.
