- 6 oz Thai chili peppers, Fresno chili peppers, or other red chili peppers
- 3 oz Garlic
- 1 c neutral oil: vegetable oil, canola oil, avocado oil, or grapeseed oil
- 1 tsp Salt
- 1 tsp Sugar

Directions

Preparation of Thai chili peppers and garlic
1. Remove the stems from the Thai chili peppers. You can adjust the spiciness by keeping or removing the seeds.
2. Place the Thai chili peppers and garlic cloves in a blender or food processor. Blend them until they reach a coarse paste consistency.
Heating the oil
1. Heat the oil in a pan over medium heat. To test if the oil is hot enough, use a wooden chopstick and dip it in the oil. If the end bubbles steadily, then the oil is ready.
Cooking the chili and garlic
1. Add the chilis and garlic to the hot oil and cook for about 10-15 minutes, stirring occasionally, until the mixture becomes fragrant and the flavors meld together.
Adding salt and sugar
1. Reduce the heat to low and add the salt and sugar. Stir well to ensure all the ingredients are thoroughly combined.
Simmering and cooling the sauce
1. Let the sauce simmer on low heat for an additional 5 minutes.
2. Remove the pan from heat and allow the sauce to cool down before transferring it to a jar or container.
Storing the sauce
1. Store the sauce in the refrigerator for up to a month.
