Ingredients

Noodles and Vegetables
- 4 oz wheat noodles
- 1 portion yu choy or bok choy
- 1 tbsp Oil
- crushed peanuts
- Scallions
Pork Topping
- 4 oz Ground pork
- 1 tsp Shaoxing wine
- 1 tsp Light soy sauce
- 0.5 tsp Dark soy sauce
- 0.25 c sui mi ya cai
Sauce
- 2 tbsp Chinese sesame paste
- 1 tbsp Light soy sauce
- 1 tsp Chinese black vinegar
- 0.25 tsp Sugar
- 0.5 tsp Sichuan peppercorn powder
- 1 tsp Garlic, grated
- 0.5 c hot noodle water or chicken stock
- 2 tbsp chili oil

Directions

Preparing the Pork
1. Heat 1 tbsp oil in a wok and add ginger.
2. Stir for 30 seconds until fragrant.
3. Add the ground pork and cook until no more pink is visible.
4. Drizzle Shaoxing wine, light and dark soy sauce around the edge. Mix well.
5. Add sun mi ya chi and stir until the pork is crispy brown.
6. Transfer out and set aside.
Preparing the Noodles and Greens
1. Bring a pot of water to a boil and add the noodles.
2. Cook for 2-3 minutes according to the package instructions.
3. Add the vegetables halfway through the cooking process.
4. Strain the noodles and greens, rinse them under cold water and set aside.
Preparing the Sauce and Assembling the Dish
1. Add sesame paste, soy sauce, vinegar, sugar, peppercorn powder, garlic, and water to a serving bowl.
2. Mix well and add chili oil.
3. Place the cooked noodles and greens in and top with crispy pork.
4. Finally, garnish with crushed peanuts and scallions.
