Pumpkin Bread
- 0.5 7oz can Pumpkin Puree
- 2 medium eggs
- 0.5 small package vanilla-flavored pudding
- 0.25 c Canola oil
- 1 c all-purpose flour
- 1 c White sugar
- 0.5 tbsp Baking soda
- 0.5 tsp pumpkin spice
- 0.25 tsp Kosher salt
- 0.333 c Chocolate, chopped or chocolate chips
Vanilla Icing
- 2 c Powdered sugar
- 2.5 tbsp whole milk
- 0.5 tsp Vanilla extract, or 1/4 tsp vanilla bean paste

Preparation of Pumpkin Bread
1. Preheat air-fryer to 270°F.
2. In a large bowl, combine pumpkin puree, eggs, pudding, and oil using a whisk.
3. Once fully combined, add flour, sugar, baking soda, pumpkin spice, and salt. Mix well.
4. Add chocolate and mix again.
5. Spray a 5-inch Bundt pan or mini loaf pan with baking spray.
6. Pour the batter inside while leaving about 1.5 inches at the top for the bread to expand.
7. Place the pan inside the air-fryer basket and cook for 20 minutes.
Preparation of Icing
1. In a small bowl, combine powdered sugar, milk, and vanilla extract for the icing using a whisk.
2. Let the pumpkin cool over a wire rack before icing.
3. Enjoy!
