- 0.75 c all-purpose flour
- 0.75 c yellow cornmeal
- 0.333 c Parmesan cheese, grated
- 1 tbsp Sugar
- 0.5 tsp Baking powder
- 0.5 tsp Baking soda
- 0.5 tsp Salt
- 0.5 tsp Garlic powder
- 0.5 tsp Onion powder
- 0.25 tsp Basil, dried
- 0.25 tsp Oregano, dried
- 0.25 tsp Red pepper flakes, crushed
- 0.25 tsp Black pepper
- 1.25 c Buttermilk
- 2 Large eggs
- 3 tbsp Unsalted butter, melted
- 1.5 c Mozzarella cheese, shredded
- 4 oz pepperoni slices
- Pizza Sauce, warmed for serving
- Hot honey, for serving
- fresh parsley or basil

Preparing the Pancake Batter
1. In a large bowl, whisk together flour, cornmeal, parmesan, sugar, baking powder, baking soda, salt, garlic powder, onion powder, basil, oregano, red pepper flakes, and black pepper.
2. Add buttermilk, eggs, and butter.
3. Stir until just combined.
4. Set aside.
Cooking the Pancakes
1. Heat a large griddle or pan over moderate heat.
2. Once hot, brush with butter or oil.
3. Working in batches, pour 1/4 cup of batter for each pancake.
4. Cook until bottoms are golden, about 1 1/2 minutes.
5. Sprinkle with some cheese and top with a few slices of pepperoni.
6. Use a wide spatula to turn pancakes and cook until second sides are golden, about 1 minute.
Serving the Pancakes
1. Serve the pancakes warm with pizza sauce, hot honey and a garnish of chopped parsley or basil.
2. Enjoy!
