- 1 squash
- 1 Tbs Olive oil
- 0.5 Onion, diced
- 1 Green bell pepper, diced
- 2 Potatoes, diced
- 1 Sweet potato, diced
- 1 large corn cob
- 4 Tomatoes, diced
- 2 cup Vegetable stock
- pinch salt and fresh black pepper
- pinch dried oregano and ground cumin

1. Peel and slice the side of the squash, including some of the center part, seeds and pulp. Wrap in foil and place on a rack over a baking tray with water.
2. Bake at 180ºC/350ºF for 40 minutes or until it softens.
3. Heat the oil and cook the onion, bell pepper, potato, sweet potato and corn, let them brown lightly; add the tomatoes and bring to a boil. Season with salt and spices. Stuff the squash with this mixture and stock. Place back in the oven for 10 more minutes.
4. Remove from the oven, uncover, share and enjoy.
