- 0.25 c vegetable broth
- 0.25 c Tomato paste
- 0.25 c Rice vinegar
- 1 clove Garlic, grated or minced
- 1 tbsp Maple syrup
- 1.5 tbsp Soy sauce, or tamari use tamari for gluten free
- Lime, juiced from 1/2 lime
- 0.5 tbsp arrowroot powder
- Salt, to taste
- Pepper, to taste
- 1 tofu, firm or super firm, pressed and cubed
- 1 tbsp Oil, of choice
- Salt, to taste
- Pepper, to taste
- 0.5 tsp Garlic powder
- 1 tbsp arrowroot starch
- 1 tbsp Sesame oil
- Salt, to taste
- Pepper, to taste
- 1 Broccoli, chopped
- grain

Preparation of Tofu and Broccoli
1. Preheat oven to 425 degrees.
2. In a large bowl toss tofu in oil and aminos.
3. ½ tablespoon at a time, toss tofu in starch.
4. Shake the bowl a few times to make sure the tofu is fully coated.
5. Evenly distribute tofu on a lined sheet pan and roast for 30-35 minutes.
6. Toss broccoli in oil, salt and pepper.
7. Roast for 30 minutes. You can add it to the same sheet pan as the tofu but it may be done before the tofu.
Preparation of Sauce
1. To prepare the sauce add all ingredients except for the starch to a saucepan.
2. Bring to a simmer and add starch.
3. Whisk until sauce is thickened (about 60 seconds) and set aside.
1. Toss tofu in sauce and serve along with veggies and grain.
