- 1 lb ground turkey
- 1 jalapeno
- 1 white onion
- 1 tsp kosher salt
- 1 tsp black pepper
- 2 tbsp Garlic powder
- 2 tbsp onion powder
- 1 tbsp sofrito
- 5 cloves Garlic, minced
- 4 c leftover rice
- 1 c cheddar cheese
- 1 c mozzarella cheese
- 4 bell peppers
- 2 tbsp butter spray
- 2 tbsp olive oil

Preparation of Bell Peppers
1. Preheat your oven to 350 degrees.
2. Spray your bell peppers with butter spray and place in the oven for about 10 minutes.
Turkey and Rice Mixture Preparation
1. In a large skillet, add olive oil.
2. Add your ground turkey, then your onions and jalapeno.
3. Cook until the turkey is browned.
4. Add seasonings and mix.
5. Add your leftover rice and mix thoroughly.
6. Add cheddar cheese and mix thoroughly.
Stuffing and Baking the Bell Peppers
1. Remove the peppers from the oven and stuff them with the turkey mixture.
2. Top with mozzarella cheese.
3. Place it back in the oven and cook until the cheese melts.
1. Serve immediately!
