- 1 tbsp Olive oil
- 1 tbsp Butter
- 0.25 lb andouille sausage
- 2 Chicken thighs, boneless, diced
- Creole seasoning
- 0.5 Onion, small, diced
- 1 celery rib
- 0.5 Green bell pepper, small, diced
- 2 clove Garlic, minced
- 0.5 tsp Dried thyme
- 0.25 tsp crushed red pepper flakes
- 2 tbsp Flour
- 2 c Chicken stock
- 1 14oz can crushed tomatoes
- Hot sauce, couple dashes
- 3 tbsp Fresh parsley, chopped
- Kosher salt
- coarse black pepper
- 0.5 lb Shrimp, peeled and deveined
- seasoned fries
- 1 lb cheese curds
- 2 Scallions, thinly sliced

Preparing the meat and vegetables
1. In a large pot add the olive oil and butter.
2. Once melted brown the andouille.
3. Transfer to a plate and then brown the chicken.
4. Season with a bit of Creole seasoning.
5. Transfer to a plate as well.
Adding the vegetables and seasoning
1. Add the onion, celery, bell pepper and garlic.
2. Season with a bit more Creole seasoning, thyme and crushed red pepper flakes.
3. Stir in the flour and cook for about 30 seconds or so.
4. Stir in the chicken stock and crushed tomatoes.
5. Bring to a simmer.
6. Return chicken and sausage to pot.
7. Add a few dashes of hot sauce and parsley.
8. Cook over low heat until thickened.
Adding the shrimp and preparing the fries
1. Stir in shrimp for the last 5 minutes of cooking. Do not over cook.
2. Cook the fries according to the package directions. I like to use the air-fryer.
3. Transfer crispy fries to a plate.
Final steps
1. Top with cheese curds and jambalaya and finish off with scallions.
2. Enjoy!
