Pumpkin Banana Bread
- 1.5 cups self-rising gluten free flour
- 0.5 teaspoon pink Himalayan salt
- 1 teaspoon Ground cinnamon
- 0.5 teaspoon pumpkin pie spice
- 0.5 teaspoon Nutmeg
- 2 medium bananas
- 1 cup homemade/canned pumpkin purée
- 8 tablespoons Unsalted butter, melted and cooled
- 0.5 cup light brown sugar, packed
- 0.25 cup white sugar granulated
- 2 large Eggs
- 1 teaspoon Pure vanilla extract
Streusel Topping
- 0.5 cup self-rising gluten free flour
- 0.5 teaspoon Cinnamon
- 0.5 cup Brown sugar, packed
- 6 tablespoons cold butter

1. Preheat oven to 350 degrees.
2. Spray bread pan with non-stick cooking spray and set aside.
3. In your stand mixer using paddle attachment add bananas, pumpkin purée, eggs, melted butter, brown sugar, and granulated sugar.
4. Mix until almost smooth.
5. Add gluten free flour, pink Himalayan salt, cinnamon, nutmeg, vanilla, & pumpkin pie spice.
6. Mix well on low & pour into bread pan.
7. Dice cold butter and mix in gluten free flour, brown sugar, & cinnamon.
8. Pour in pan and bake for 50 minutes to 65 minutes.
