- 2 Tbs Olive oil
- 1 kg squid
- 1 Onion, chopped
- 1 Green bell pepper, chopped
- 1 clove Garlic, chopped
- 0.5 cup White wine
- 1 Bay leaf
- 2 Tbs squid ink
- 0.5 cup Water
- 2 cup White rice, cooked

1. In a wide pan, heat a tbsp of oil and sear the squid on both sides and place to the side. Add the rest of the oil into the same pan and add the onion, bell pepper and garlic. Cook for 6 minutes on low heat until softened. Pour the white wine and cook for a few minutes until it reduces in half.
2. Add the bay leaf, squid ink and water and incorporate. Stir in the squid and add salt. Cook for 20 minutes or until the squid is soft.
3. Serve over white rice, share and enjoy.
