- 2 Onions, chopped small
- 2 Shallots, sliced thin
- 3 tbs Butter
- Salt, to taste
- pinch Sugar
- 8 oz Cream cheese, softened
- 8 oz Crème fraîche, or sour cream
- 0.5 tsp Cayenne pepper
- 1 tsp Onion powder
- 1 tsp Garlic powder
- 0.5 tsp Black pepper
- 1 packet onion dip mix
- 1 bunch Chives, chopped small and divided
- 1 bag potato chips
- Beer, optional

1. Melt butter over medium high heat, adding in the onions and shallots once butter is melted.
2. Season with salt and a pinch of sugar (this will help the caramelization) and cook until the onions are the color of caramel (about 25-30 minutes). Stir frequently so the onions don’t burn. Optional: Add in a splash or two of beer to the cooking onions. Once the onions are done, remove from heat and set aside.
3. In a mixing bowl, add in the cream cheese, crème fraîche, the seasonings, onion mix, half of the chives and cooled caramelized onions. Stir with an electric mixer (or by hand, just make sure everything is well incorporated) until everything is combined.
4. Garnish with the remaining chives, and serve with potato chips!
1. If making ahead, make sure to remove from the refrigerator 1 hour before serving, you want the cream cheese soft before serving.
