Bacon Jalapeños
- 1 lb Bacon
- 12 jalapeños
- 1 package boursin garlic and herb cheese
- 1 c panko bread crumbs
- 8 oz mexican blend cheese
- 2 tbs Butter
- Salt, to taste
- Pepper, to taste

1. Preheat oven to 400º.
2. Melt butter in a pan over medium high heat. Once melted, add in the panko breadcrumbs and stir constantly until they toast to a golden brown color. Remove from heat and set aside.
3. Carefully deseed your jalapeño halves. Once the seeds are removed, season the inside of the jalapeño with salt and black pepper.
4. Stuff the jalapeño half with Boursin cheese until the entire half is full of Boursin.
5. Sprinkle some of the toasted breadcrumbs over the Boursin, and top with a sprinkle of shredded cheese.
6. Carefully wrap the jalapeño with bacon (you don’t want the breadcrumbs/cheese to fall out) and fix the bacon onto the jalapeño with a toothpick if needed.
7. Bake for 25 min or until the bacon looks fully cooked.
8. Set your oven to broil, and broil for 2 more minutes, just to crisp everything up.
9. Remove from the oven and serve.
