Pasta Dough
- 1 c Ricotta
- 1 Egg
- 0.5 c Parmesan
- 0.5 tsp Salt
- 1 c Flour, 00 or all purpose

Prepare the Dough
1. Combine ricotta, egg, parmesan, and salt together and mix until fully combined.
2. Add flour to the ricotta egg mixture until fully incorporated.
3. Move mixture to a flat table and knead until fully incorporated, adding as little extra flour as possible. You'll want just enough flour that you can work the dough without it sticking.
4. Quarter the dough.
Hand Form the Gnocchi
1. Roll each piece into 1-inch ropes, dusting with flour to keep from sticking.
2. Cut lengthwise into 1-inch cubes.
3. Option to add ridges with a fork or gnocchi board.
Cooking/Storage Instructions
1. Ready to cook immediately in salted boiling water for 2-5 minutes
2. Once Gnocchi begin to float, carefully remove from water & add to your favorite sauce
3. If making ahead of time, store gnocchi in the freezer until ready to cook. Do not thaw.
