- 3 Avocados, ripe (keep 1 of the pits)
- 0.5 c Yellow onion, diced
- 3 Roma tomatoes, ripe, diced
- 5 clove Garlic, minced
- 2 Limes, juiced
- 0.25 c Cilantro, chopped
- 0.25 c Oregano, chopped
- 1 tbsp Onion powder
- 1 tbsp Garlic powder
- 1 tbsp Kosher salt
- tajin
- 1 small jalapeno
- 0.5 c cotija cheese

Preparation of Avocados
1. Cut your ripe avocados lengthwise.
2. Remove the pit, by using the “knife twist” method or a spoon.
3. Keep one of the pits from the Avocado. You will need this to keep your guacamole fresh.
Adding Ingredients and Mixing
1. Add avocados to the bowl along with all of the other ingredients. No specific order.
2. Use a large fork to smash everything together.
3. As you are mixing, use a small spoon to taste your guacamole.
4. Add more seasoning if necessary. Remember, if enjoying guacamole with chips they normally have salt on them, so go easy on the addition of salt.
Final Touches and Storage
1. Once your mixture has reached your desired texture, add the avocado pit to the center. This helps keep the dip fresh.
2. I love to garnish with Cotija Cheese crumbled on top and a sprinkle of Tajin.
3. Wrap your guacamole in plastic wrap and store in a cool place until you are ready to enjoy.
