Ingredients

Crust
- 200 g Graham Crackers or Wheat Digestives
- 90 g Unsalted butter, melted
- pinch Salt
Cheesecake filling
- 800 g Cream cheese, room temperature
- 150 g Granulated sugar
- 2 tsp Vanilla bean paste
- 0.5 tsp Salt
- 4 tbsp Lemon juice, to taste
- 120 g Sour cream
- 120 g Heavy cream, chilled
Decoration (optional)
- 120 g Heavy cream, chilled and whipped
- Fresh berries

Directions

Crust Instructions
1. For the crust, grind the graham crackers, then add the melted butter and salt and mix.
2. Line a 9” springform pan with parchment paper.
3. Place the crust ingredients tightly on the bottom of the lined pan, using the back of a measuring cup to tightly pack them down. Place in the fridge.
Cheesecake Filling Instructions
1. Use the paddle attachment of a stand mixer to mix the cream cheese, sugar, vanilla and salt until creamy and the sugar is dissolved (~2 minutes).
2. Add in the sour cream and lemon juice, and mix until combined.
3. Separately, whisk the heavy cream until it reaches stiff peaks.
4. Gently fold the whipped cream into the cream cheese mixture until combined.
5. Pour the cheesecake filling into the prepared pan on top of the crust, and press it down with an offset spatula to remove any air bubbles and spread evenly.
6. Place the cheesecake in the fridge for 4 hours (or overnight) until fully set.
Decoration Instructions
1. Decorate with fresh strawberries and whipped cream, and serve!
