Ingredients

Tortillas
- 1 pack Flour tortillas
Potato
- 1 Potato, diced
Eggs
- 6 Eggs
Breakfast Sausage
- 1 lb breakfast sausage
Onion
- 0.25 c Onion, finely chopped
Jalapeno Pepper
- 1 Jalapeno pepper, seeds removed and finely chopped (optional)
Cheese
- 1 c Monterey jack cheese, shredded
Seasonings
- Salt, to taste
- Pepper, to taste
- Cumin, to taste
- chipotle powder
Cooking Spray or Olive Oil
- Cooking spray, or olive oil

Directions

Preparation
1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
2. In a large bowl, add your diced potatoes, a drizzle of olive oil, salt, pepper, and chipotle powder (optional). Mix until combined.
3. Spread the potatoes evenly on the baking sheet and roast for 20-25 minutes until golden brown.
4. Heat a drizzle of oil in a skillet on medium heat then add onion and jalapeno, stirring occasionally for about 2 minutes.
5. Add the breakfast sausage to the pan and cook through for about 8 minutes, breaking it up with a spatula.
6. Add 6 eggs to the same pan and scramble until just done (they’ll continue cooking in the oven).
7. Add the cooked ingredients, including the potatoes to a large bowl and mix well to combine.
Assembling the Taquitos
1. Take a flour tortilla and place a spoonful of the filling mixture onto one end then top it with a sprinkle of cheese.
2. Gently roll the tortilla tightly around the filling, forming a taquito.
3. Place the taquito seam-side down on a lightly oiled casserole dish.
4. Repeat the process until all the filling is used.
5. Lightly coat the taquitos with cooking spray or brush them with olive oil.
6. Place the casserole dish in the preheated oven and bake for approximately 12-15 minutes or until the taquitos are crispy and golden brown.
7. Optional, top with hot sauce and enjoy.
