- 2 lb boneless beef chuck
- 2 Tbs Olive oil
- 2 Bay leaves
- 1 Tbs Cornstarch
- 2 white onion(s), cut into pieces
- 2 clove Fresh garlic, chopped
- 1 bottle Dry red wine
- 2 cup beef broth
- 2 cup Water
- 2 Tbs Tomato paste
- 1 Tbs beef bouillon
- 4 sprig Fresh rosemary
- 1 handful Fresh thyme
- 1 bunch Fresh parsley, chopped
- 6 Red potatoes, cut into chunks
- 4 Carrots, peeled and cut into pieces
- Salt, to taste
- Pepper, to taste

1. Season beef chuck with salt and pepper.
2. Add oil to dutch oven and add in pieces of beef chuck. Sear on both sides and then remove. Add in onions and garlic. Once softened add in tomato paste and cook for 4-5 minutes.
3. Once tomato paste is cooked down, deglaze with red wine. Add in pieces of beef, beef broth and water. Add in fresh rosemary, bay leaves and thyme. Also, add in potatoes and carrots.
4. Bring to a simmer and cook on low for 2 hours. Season with salt & pepper as needed.
5. If soup is too thin, combine 1 tsp cornstarch and water to create a slurry to thicken the broth. After 2 hours- remove fresh herbs and serve.
6. Top with fresh parsley and black pepper. Enjoy!
