Main Ingredients
- 2 lbs flank steak
- 2 tbsp Kosher salt
- 2 tbsp Pepper
- 1 c Spinach, chopped
- 1 c Mushrooms
- 0.5 c Bacon, cooked and chopped
- 6 Havarti cheese slices
Special Tools
- Bamboo Skewers
- Meat tenderizer
Chimichurri Sauce
- 0.75 c Parsley
- 4 mini peppers
- 0.25 c Red wine vinegar
- 0.5 c Extra virgin olive oil
- 1 Lemon, juiced
- Kosher salt, to taste

Prepare and heat your grill
1. Prepare and heat your grill to 400° F.
Prepare the steak
1. Butterfly your flank steak using a sharp knife.
2. Using a meat tenderizer, tenderize your steak.
3. To the center of the butterflied flank steak, add your seasoning, bacon, spinach, mushrooms and cheese.
4. Starting at one end, roll your flank steak together.
5. Using your soaked bamboo skewers, place a skewer through the rolled flank steak separating each one by 1.5 inches.
6. Season your steak with salt and pepper on the outside.
7. Using a sharp knife, cut in between the skewer placements.
8. Season the inside of the steak as well.
Grill the steak
1. Once your grill is hot, place your steak on the grill.
2. Baste with butter halfway through cooking.
3. Once your steak is cooked to your liking, remove it from the grill and let it rest before serving.
Prepare the chimichurri sauce
1. While your steak is cooking, in a hand blender, mix all ingredients for the chimichurri sauce.
2. Taste and adjust with salt and lemon if needed.
Serving instructions
1. Enjoy with your chimichurri sauce, potatoes and a seasonal vegetable of your choice!
