- 1 whole duck breast
- 2 tsp Kosher salt
- 2 tsp Black pepper
- 3 Tbs Unsalted butter
- Thyme
- Rosemary

1. Take your duck breast and leave out at room temperature for an hour.
2. Preheat your oven to 350 degrees.
3. Pat it dry on both sides with a paper towel.
4. Season the duck breast with kosher salt and black pepper.
5. Place the duck breast skin side down in a cold pan.
6. Turn the stove on medium high heat and let the fat render off.
7. After about five minutes, flip the duck breast over.
8. Add thyme, rosemary, and butter to the pan and baste.
9. Finish in the oven for about 5-7 minutes and let it rest for the same amount of time as it cooks.
10. Slice your duck breast thinly across the grain.
11. Serve immediately.
