Ingredients

Pita and Vegetables
- 2 pita breads
- 1 Eggplant
- 0.25 c Olive oil
- 1 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 0.5 Cucumber, cubed
- 1 c Cherry tomatoes, halved
- 0.25 c Mint, chopped
- 0.5 c pickled red cabbage
Tahini Sauce
- 0.25 c Tahini, Lebanese brand for a liquid tahini
- 1 Lemon, juiced
- pinch Salt
- water, as needed
Marinated Onion
- 1 Red onion
- 1 Lemon, juiced
- pinch Salt
Herbed Yogurt Sauce
- 1 c plant-based yogurt
- 0.5 c Fresh parsley, chopped
- 0.5 c Fresh mint, chopped
- 0.5 Lemon, juiced
- 0.25 tsp Salt
- 0.25 tsp Pepper
- drizzle Olive oil

Directions

Preparation of Eggplant
1. Slice the eggplant into 1/2 inch thick rounds, place them on a cutting board, and sprinkle them with salt.
2. Let them sit for 10 minutes to draw out the excess moisture, then pat them dry with a kitchen towel.
3. Heat some olive oil in a pan over medium-high heat and roast the eggplant until fully cooked on both sides.
Preparation of Tahini Sauce
1. Blend tahini with lemon juice, salt, and water until you achieve a thick and creamy consistency.
Preparation of Cucumber Salad
1. Marinate the cucumber cubes in olive oil, salt, and pepper.
Preparation of Tomato Salad
1. Marinate cherry tomatoes with olive oil, fresh mint, salt, and pepper.
Preparation of Red Onions
1. Thinly slice red onions and marinate them in salt and lemon juice.
Preparation of Yogurt Sauce
1. Mix all the ingredients together.
Assembling the Dish
1. Toast the pita bread and spread the inside with the tahini sauce.
2. Add a layer of eggplant, onion, cucumber, and tomato salad, pickled red cabbage, and drizzle with yogurt sauce.
3. This dish is best enjoyed immediately.
