- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- 0.5 c dairy-free milk
- 1 tbsp coconut oil
- 1 c almond flour
- 2 tbsp coconut flour
- 1 tsp baking powder
- 0.25 tsp salt

Prepare wet ingredients
1. In two bowls, separate the egg yolks from the egg whites.
2. Using a hand mixer or a whisk, whip the egg whites until peaks form. Set aside.
3. In the bowl with the egg yolks, add the vanilla extract, maple syrup, dairy-free milk (or regular milk if not dairy-free), and coconut oil and whisk to combine.
Prepare dry ingredients
1. In a separate bowl, add the almond flour, baking powder, salt, and coconut flour. Mix thoroughly.
Combine wet and dry ingredients
1. Slowly whisk in the wet ingredients (except the egg whites). Mix until combined.
2. Gently fold in the egg whites.
Cook pancakes
1. In a pan on medium-low, add a teaspoon of coconut oil.
2. Pour in about ¼ cup of the batter. Allow to set and cook on one side for 3-4 minutes or until the batter forms bubbles.
3. Flip and cook on the other side for 1-2 minutes.
4. Serve immediately and enjoy with your favorite syrup or toppings of choice!
