Pie Crust
- 2 c all-purpose flour
- 0.5 tsp Salt
- 0.667 c Unsalted butter
- 7 Tbsp water
- 2 Tbsp roasted sesame seeds
- 10 fresh apricots
- 2 Tbsp Brown sugar, for sprinkling
- Pumpkin seeds, crushed
- Honey, to drizzle
- sweet whipped cream

Pie crust
1. Mix the flour, salt, and butter together until it's a crumble.
2. Add in the water until the dough comes together.
3. Fold once or twice for extra layers.
4. Split in half (you will only require half for this recipe) and roll out until it's about 1 cm thick.
1. Preheat oven to 350°F and line a baking tray with parchment paper.
2. Place the cut apricots inside the middle of the pie crust, until you fill it to the edge. Leaving 1 inch on the outside edge.
3. Fold the edges in, brush with egg wash (optional) and sprinkle with extra sesame seeds.
4. Top the apricots with brown sugar and crushed pumpkin seeds.
5. Bake for 40 - 45 minutes, until apricots are soft and crust is golden brown.
6. Top with honey and sweet whipped cream (optional)
