Taco Meat
- 2 Chicken breast, shredded
- 2 tbsp Olive oil, separated, more if needed
Chicken Seasoning
- 0.5 tsp Chili powder
- 0.5 tsp Onion powder
- 0.5 tsp Garlic powder
- 0.5 tsp pink Himalayan salt
- 0.5 tsp coarse black pepper
- 8 gluten free tortillas
- 1 can mild green enchilada sauce
- 2 Cups Monterey jack cheese
- 3 tbsp Olive oil

Preparing the Chicken
1. In a large frying pan, heat olive oil on medium.
2. Cut two chicken breasts lengthwise and place in the frying pan.
3. In a small bowl, mix together chicken seasoning and add to the frying pan, covering all sides of the chicken breast.
4. Remove chicken from the pan once it has reached an internal temperature of 165 degrees.
5. Shred the chicken with two forks and set aside.
Preparing the Tacos
1. Pour mild green chili into a plate.
2. Cover the tortilla with green chili and fill with 1/4 cup Monterey Jack Cheese and 1/4 cup shredded chicken, then fold in half.
3. Add olive oil to the frying pan that was used for the chicken and cook on medium.
4. Place tacos into the frying pan and cook for 5 minutes on each side or until the outside is golden brown.
