Cookie Dough
- 10 tbsp Unsalted butter
- 0.5 c light brown sugar, packed
- 0.25 c White sugar
- 0.5 tsp vanilla
- 0.5 c powdered graham crackers
- 1 Large egg, room temperature
- 1 c All purpose flour, scant
- 0.75 tsp Salt
- 0.5 tsp Baking powder
- 0.25 tsp Baking soda
- 6 oz semi or dark chocolate
- 4 graham crackers
- Marshmallows, optional

Prepare the Cookie Dough
1. Brown the butter by heating at low heat in a pan until it changes color and becomes fragrant.
2. Whisk with sugars until they are well combined (3-5 min).
3. Add the egg and vanilla and whisk for another 1-2 min until a creamy mixture forms.
4. Grind the Graham crackers in a processor or blender.
5. Add to the batter and whisk until combined.
6. Sift in the dry ingredients and gently fold with a spatula until halfway combined.
7. Add the chopped chocolate and Graham crackers and continue folding until the dough just comes together. Do not overmix.
8. Gently scoop the dough into balls using a 2tbsp scoop. Don’t put too much pressure.
9. Top with marshmallows if you’d like.
10. Refrigerate for at least 2 hours.
Bake the Cookies
1. Preheat the oven to 360F and line 2 baking sheets.
2. Transfer the cookie dough balls onto the baking sheets and bake for about 12 min. Cookies shouldn’t harden all the way, they will set more as they cool.
3. Take out and smack on the counter to flatten the cookies.
4. Let them rest for 20 min and then enjoy!!!
