- 2 tbsp Olive oil
- 4 oz Pancetta, diced
- 3 clove Garlic, minced
- 1 Shallot, medium, chopped
- 1 lb gnocchi
- Kosher salt
- Black pepper
- 0.25 tsp Red pepper flakes, crushed
- 2.5 c Chicken stock
- 1 c peas
- 0.5 c Parmesan
- 0.25 c Basil, fresh, chopped

Preparation of the skillet
1. Set a large skillet over medium-high heat.
2. Drizzle in the olive oil and pancetta.
3. Cook until crispy.
4. Add garlic and shallot and cook until softened.
5. Stir in the uncooked gnocchi and season with a large pinch of salt, pepper and crushed red pepper flakes.
Adding the stock and peas
1. Add the stock and peas.
2. Cover and cook over low heat, stirring occasionally, until the gnocchi are soft and tender, about 10-12 minutes.
Final touches
1. Uncover and stir in Parmesan and basil.
2. Give it a taste and adjust seasoning accordingly, adding more salt or pepper as needed.
3. Serve with more parmesan and basil.
4. Enjoy!
