Chicken Marsala
- 4 Chicken breasts, thinly sliced
- 0.5 c All purpose flour
- 2 tsp Kosher salt
- 2 tsp Black pepper
- 1 tbsp Garlic powder
- 6 clove Garlic, minced
- 6 tbsp European butter
- 4 tbsp Olive oil
- 2 c Cremini mushrooms, thinly sliced
- 0.5 c marsala wine
- 1 tsp dry thyme leaves
- 0.333 c cornstarch slurry
- 0.5 c Heavy cream
- 1 c Chicken stock

Preparing the Chicken
1. In a large bowl, add your flour plus half of your seasonings.
2. In another bowl, season your chicken with the remaining half of your seasonings.
3. Add the seasoned chicken to the bowl with the seasoned flour and lightly coat.
4. In a large saucepan, add a tablespoon of butter and a tablespoon of olive oil, turning your oven on to medium heat.
5. Once the butter melts and the pan is hot, add your chicken to the pan.
6. Cook for 4 minutes per side.
7. Repeat the steps of adding butter and oil until all of your chicken is cooked.
8. The chicken will only be cooked about 80% of the way.
9. Place in the oven on the lowest setting to keep warm.
Preparing the Sauce
1. In that same pan, add remaining butter to deglaze the pan.
2. Add your mushrooms and cook for about 2 minutes, ensuring the butter and fond coats the mushrooms.
3. Add your Marsala wine and cook until reduced, about 3 minutes.
4. Turn the heat to medium low.
5. Add the garlic, chicken stock, and cornstarch slurry.
6. Reduce to medium low and allow to simmer.
7. Add cold heavy cream and mix.
8. Season to taste with salt and pepper.
Final Steps
1. Add your chicken breasts back to the pan to coat and cook for 3-4 minutes. This will finish the cooking process.
2. Garnish with fresh parsley, serve with mashed potatoes or fettuccine, and enjoy.
