- 0.5 c Vegan butter
- 0.5 c Dark chocolate, or chopped
- 0.5 c Granulated sugar
- 0.5 c Brown sugar, packed
- 2 Large eggs
- 1 tbsp Cocoa powder
- 1.5 tsp Vanilla extract
- 0.5 tsp Instant espresso powder, optional
- 0.5 c gluten free flour, with xanthan gum
- 0.5 tsp fine sea salt
- 0.667 c Chocolate chips

1. In a small pot, melt together vegan butter and dark chocolate.
2. Stir consistently to avoid burning.
3. Once they’re completely melted, take the pot off the heat.
4. Add the granulated sugar, brown sugar, cocoa powder, and whisk together until it’s combined.
5. Add the egg one at a time, mixing after each addition.
6. Add the vanilla extract and instant coffee granules and mix until combined.
7. In a small bowl, mix together gluten-free flour blend and fine salt.
8. Add the mixture to the pot and mix the batter until smooth.
9. Switch to a spatula or wooden spoon and mix in the chocolate chips.
10. Set the pot aside to let the batter rest for 20 minutes.
11. While the batter rests, preheat the oven to 350°F (180°C).
12. Grease and line an 8x8 inch square pan with parchment paper.
13. Pour the rested brownie batter into the prepared pan and bake for 30 minutes.
14. Once the brownies come out of the oven, run a knife along the sides (between the brownies and parchment paper) to prevent them from sinking in the center.
15. Let the brownies cool completely before taking them out of the pan to cut and serve.
