Ingredients

- 2 Tbs Olive oil
- 1 Onion, chopped
- 3 clove Garlic, chopped
- 1 can Tomatoes
- 2 medium potatoes
- 1 cup fennel leaves
- 2 Bay leaves
- 0.25 tsp Saffron
- 0.5 tsp Cayenne pepper
- Pinch, rock salt
- 0.5 tsp Fresh black pepper
- 8 cups
- 4 fillet white fish
- 2 cup mussels
- 2 cup medium shrimp
- 1 lobster tail
- 6 large croutons

Directions

1. Heat the olive oil in a heavy bottom pot, add the onion and garlic, cook until they soften; stir in the tomatoes and cook for 2 more minutes. Add the potato, fennel, bay leaves, saffron, cayenne, salt and pepper; stir until incorporated.
2. Pour in the fish stock and bring to a boil with the lid on. Simmer until the potatoes are soft, around 8 minutes. Add the fish, mussels, shrimp and lobster and cook for around 6 minutes on low heat until the mussels open up.
3. Plate a crouton on a bowl and serve the seafood and broth.
4. Enjoy.
