- 1 lb pork ribs
- 8 oz lotus root
- 4 slices Ginger
- 1 stalk Scallion
- 6 cups water
- 4 cups water
- 1 tbsp Shaoxing wine
- 1 tsp Salt, to taste

Preparation of pork ribs
1. Thoroughly rinse the pork ribs under cold water.
2. Add 6 cups water, pork ribs, and Shaoxing wine to a large pot. Bring it to a boil over high heat.
Preparation of lotus root
1. Remove the ends of the lotus root and peel off the skin.
2. Cut it into thick slices and keep them soaked in water to prevent them from discoloring.
Combining and cooking the ingredients
1. Once the water is boiling, drain and rinse the ribs clean.
2. Transfer them to a clay pot and add lotus roots, ginger slices, scallion, and 4 cups water.
3. Bring it to a boil and immediately turn the heat to low and cover.
4. Simmer for 1.5 hours.
Alternative cooking method
1. Alternatively, add the ingredients to an instant pot/pressure cooker and cook on high for 30 minutes.
Final steps
1. When the soup is done, add salt to taste.
2. Garnish with scallions and serve with rice.
