Ingredients

For the sauce
- 0.25 cup BBQ sauce
- 1 Tbs Lime juice
- 1 Tbs Olive oil
- 1 Tbs Maple syrup
- 1 Tbs Ginger, grated
- pinch salt and fresh black pepper
- 1 stem Green onion, sliced
- pinch Cayenne pepper
For the vegetables
- 1 tsp Ground cinnamon
- 1 Tbs Ground cilantro
- 1 tsp Allspice
- 0.25 tsp Cayenne pepper
- 2 Tbs Fresh thyme
- 4 clove Garlic, mashed
- 1 Tbs Ginger, grated
- 3 Tbs Lime juice
- 0.25 cup Soy sauce
- 2 Tbs Coconut oil
- 2 Tbs Maple syrup
- 2 stem Green onion, sliced
- 1 manzano pepper
- 2 eggplants
- 3 Zucchinis, sliced thick lengthwise
- 1 cup Whole grain rice, cooked

Directions

For the sauce
1. In a bowl, mix all the ingredients and whisk until fully incorporated. Place to the side.
For the vegetables
1. In a bowl, mix the ground spices, thyme, garlic, ginger, lime juice, soy sauce, maple syrup, oil, onion and pepper until integrated.
2. Coat the vegetable slices in this mix and marinate for a few minutes.
3. Heat up a grill or grilled pan and grease lightly. Grill the vegetables for 4 minutes on each side or until they get grill marks and they soften.
4. Serve with sauce and rice.
5. Share and enjoy.
