- 4 c bone broth
- 4 Eggs, beaten
- 0.5 tsp Salt
- 1 chicken bouillon cube
- 2 Scallions, sliced, greens and whites separated
- 2 tbsp Cornstarch
- 0.25 c water
- White pepper

Prepare the broth
1. In a medium-sized pot, bring the bone broth to a gentle simmer over medium heat.
2. Add the chicken bouillon cube, salt, and scallion whites.
3. Stir until the bouillon cube dissolves.
Prepare the cornstarch mixture
1. In a cup, add the water and cornstarch.
2. Mix to dissolve.
3. Add to the pot and bring to a boil.
4. Once thickened, reduce heat to a simmer.
Add the eggs
1. In a small bowl, beat the eggs thoroughly.
2. Once the broth is simmering, slowly pour the beaten eggs into the pot.
3. Gently stir the eggs with a spoon to break up the egg ribbons.
Final steps
1. Remove from heat and top with scallion greens and white pepper.
