Main Ingredients
- 1 lb pork loin
- 2 clove Garlic, minced
- 1 tsp Ginger
- baby bok choy
- 3 Scallions
- 1 c dried shiitake mushroom
- 1.5 c flat rice cakes
- splash Shaoxing wine
- 1.5 tbsp Light soy sauce
- 0.5 tbsp Dark soy sauce
- 0.5 tbsp Oyster sauce
- 1 tsp Sugar
- pinch MSG
- 1 tsp White pepper
- Sesame oil
- Fly By Jing Sichuan Gold
Marinade for Pork
- 2 tbsp Light soy sauce
- 0.5 tbsp Dark soy sauce
- pinch White pepper
- 1 tsp Cornstarch
- 1 tbsp water
- drizzle Sesame oil

1. Marinate pork with the above marinade while preparing the rest of the ingredients.
2. Mince garlic and roughly chop ginger.
3. Wash and separate the bok choy.
4. Cut scallions into 2 inch pieces including both whites and greens.
5. Soak dried shiitake mushrooms for 10-15 minutes until the mushrooms expand.
6. Drain and reserve 1/2 cup of mushroom water.
7. Oil a hot pan and saute garlic, ginger, and scallions for 1-2 minutes.
8. Stir in pork until cooked.
9. Toss in shiitake mushrooms.
10. Add in bok choy while creating a nice bed for the rice cakes to lay.
11. Toss in rice cakes with a splash of shaoxing wine and the reserved mushroom water.
12. Cover until the rice cakes are soft and the liquid has reduced.
13. Season with light and dark soy sauce, oyster sauce, sugar, MSG, white pepper, sesame oil and Fly By Jing Sichuan Gold!
