Bacon and Avocado
- 12 slices Bacon
- 1 Avocado
- 1 tbsp Lime juice
- Kosher salt
- coarse black pepper
Mayo and Bread
- 0.5 c Mayo
- 8 slices Sourdough bread
- 6 tbsp Butter, softened
Eggs and Vegetables
- 4 Large eggs
- 1 lb Tomatoes, sliced
- 8 lettuce leaves

Cooking the bacon
1. Cook bacon in oven in a single layer until crispy.
2. Transfer to paper towels to drain.
Preparing the avocado spread
1. Mash avocado in a bowl with lime juice, salt, and pepper.
2. Stir in Mayo and set aside.
Preparing the bread and egg
1. Cut a hole in the center of half the bread slices.
2. Butter both sides of each bread slice and toast in a hot pan.
3. Add a bit of butter to the center of the bread with the hole and crack an egg into each.
4. Season with salt and pepper.
5. Cook until browned on both sides but the yolk is still runny.
Assembling the sandwich
1. Spread avocado Mayo onto the bottom slices of toasted bread.
2. Top with lettuce, tomato slices (season with salt and pepper), 3 slices of bacon each sandwich and the egg in a hole piece of bread.
3. Slice, serve and enjoy.
