- 3 yellow plantains
- 1 lb ground chicken
- 1 tbsp Avocado oil
- 0.25 c Onions, diced
- 2 tbsp sofrito
- 0.25 roasted red peppers
- 1 tbsp cilantro paste
- 2 tsp adobo
- 1 tsp sazon
- 1 tbsp Tomato paste
- 1 tbsp garlic paste
- 2 tbsp Butter
- 2 c shredded cheese

Preparing plantains
1. Peel the plantains and cut into 1” pieces.
2. In a large pot, add the plantains, cover with water and boil until the plantains are cooked (soft enough to stick a fork in them).
3. Drain the plantains and add back into the pot.
4. Using a potato masher, mash the plantains with the butter and garlic paste.
5. Add salt to taste.
Preparing chicken
1. Add the oil into a frying pan.
2. Add the onions, sofrito, peppers, and cilantro.
3. Add the meat with seasonings and break apart the meat.
4. Cook until the meat has browned.
5. Add the tomato paste and mix well.
6. Once the meat is cooked, set aside.
Assembling and baking
1. Add the mashed plantains into a bottom of a baking dish, add a layer of meat and cheese, then another layer of plantains.
2. Continue until you run out of ingredients.
3. Make sure the top layer is cheese.
4. Bake until the cheese melts and enjoy!
