- 32 oz vianda
- yuca, peeled and cubed
- yautia
- ñame
- yams
- calabaza
- squash
- green bananas
- green plantains
- 1 lb Chicken breasts, boneless
- 1 lb ribs
Seasonings and Spices
- 2 tbsp roasted red peppers
- 1 tsp vegetable bouillon
- 1 tsp chicken bouillon
- 2 tbsp sofrito
- 1 tbsp garlic paste
- 2 tbsp spanish olives
- 2 tbsp Tomato paste
- 1 tbsp Healthy Rican Sazón
- 1 tbsp Healthy Rican Savory Spice Mix
- 3 Bay leaves
Additional Ingredients
- 4 c water, to cover

Directions

Pressure Cooking the Ingredients
1. In a pressure cooker, add all the ingredients.
2. Cover with water and mix well.
3. Cover with the lid and cook for 30 minutes on high pressure.
4. Once done, carefully release the pressure, open the lid.
5. Check your meat and root vegetables to make sure they are completely cooked.
6. Try the broth and make sure you like the flavors.
7. Add additional salt or spices at your own discretion.
Thickening the Broth
1. If you’d like the broth to be thicker, continue to cook a little longer, or remove some of the root vegetables, mash and bring back into the pot.
2. Mix well and continue to cook until the broth is thick enough or the consistency you like.
Serving Suggestions
1. Can be served with rice or on its own as a hearty soup.
