Ingredients

Dough
- 5 g Cocoa powder
- 30 g Sugar
- 10 g Corn starch
- 85 g Milk
- 45 g glutinous rice flour
- 10 g Butter
Filling
- 25 g Dark chocolate
- 25 g hot whipping cream
- 0.25 cup cold whipping cream
- 2 tablespoons Sugar

Directions

Preparing the Mochi Dough
1. In a pan, add cocoa powder, sugar, corn flour and 30g milk. Mix until combined.
2. Add 55g milk and mix until combined.
3. Add glutinous rice flour and mix until combined.
4. Add butter.
5. Mix and cook on low heat until soft dough is formed. The mochi is ready. Keep it aside.
Preparing the Chocolate Cream
1. In a bowl, add chocolate and hot cream. Let it sit for 2 minutes.
2. Mix until silky smooth.
Preparing the Whipped Cream
1. In a bowl, add cold cream and sugar.
2. Mix until stiff peaks are formed.
3. Add the chocolate mixture and mix until combined and stiff.
Assembling the Mochi
1. Use hand gloves and knead the mochi until stretchy.
2. Dust corn flour and transfer the mochi. Flatten it.
3. Place in a small cup. Add the prepared cream in the middle.
4. Cover and pinch the mochi together. Cut off the excess and dust corn flour to prevent sticking.
